Makes approximately 25-30 bites

Ingredients:

1.5 C Rolled Oats                                               0.25 C Psyllium Husk

0.25 C Flax seeds                                              0.5 C Walnuts or any nuts you like

14 oz Pumpkin Puree                                       0.5 C Maple syrup

0.5 C Apple Sauce                                              0.25 C Dates, Figs and or Prunes

0.25 C Dried cranberries                                  0.25 C Raisins

0.5 C Mini Chocolate Chips                              1 tsp Cinnamon

1 tsp Vanilla extract                                          1 pinch of salt

Optional:

1 tsp Almond extract

0.25 tsp Ground ginger

0.25 Nutmeg

0.25 pumpkin Spice

  • Mix Pumpkin puree, Maple Syrup, and Apple sauce together along with the Vanilla extract, cinnamon, and rest of optionals list above in a box until mixture is smooth.
  • Add Oats, Psyllium Husk, Flax seeds, Walnuts, or any nuts you like. As well as the Dates, Figs and or Prunes, Dried cranberries, Raisins, Mini Chocolate Chips.
  • The mixture should resemble a cookie dough consistency. Place covered bowl in fridge to firm up for 15 minutes.
  • Line 2 baking sheets with parchment paper and wet hands slight with water. Roll 2 tablespoon sized portions into balls and place on baking sheet to rest. Once all balls have been formed transfer then back into refrigerator to firm up, approximately 30 minutes.
  • Balls can stay in airtight container for 1 week or in the freezer for up to 3 months.

For younger children under the age of 4 years you can puree the Dates, Figs and or Prunes, Dried cranberries, Raisins in a food processor to reduce concerns for choking.
